Ingredients

The chicken

  • 1 pound Boneless, Skinless Chicken Breast
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Ground Black Pepper

The breading

  • 2 large Eggs
  • cup Panko Breadcrumbs
  • ½ cup Italian Breadcrumbs
  • cup Parmesan Cheese
  • 1 tablespoon Italian seasoning (if making your own Italian breadcrumbs)

The sauce and cheese

  • 1 24 ounce jar Marinara Sauce
  • 1 cup Mozzarella Cheese

Miscellaneous

  • 1 spray Cooking Spray
  • to taste Fresh Parsley (for garnishing)

Instructions

  1. Preheat the oven to 425°F.
  2. Pound the chicken breasts thin and season with salt and pepper.
  3. Whisk the eggs in a bowl and combine the breadcrumbs and parmesan in another bowl.
  4. Coat the chicken in the egg wash, then in the breadcrumb mixture.
  5. Place the coated chicken on a baking sheet and spray with cooking spray.
  6. Bake the chicken for 15 minutes.
  7. On a separate baking sheet, pour the marinara sauce and top with mozzarella cheese.
  8. Place the sauce and cheese tray in the oven with the chicken and bake for 8-10 minutes.
  9. If desired, broil for 1 minute to brown the cheese.
  10. Serve the chicken topped with marinara and cheese, garnished with parsley.
