Instructions
- Preheat the oven to 425°F.
- Pound the chicken breasts thin and season with salt and pepper.
- Whisk the eggs in a bowl and combine the breadcrumbs and parmesan in another bowl.
- Coat the chicken in the egg wash, then in the breadcrumb mixture.
- Place the coated chicken on a baking sheet and spray with cooking spray.
- Bake the chicken for 15 minutes.
- On a separate baking sheet, pour the marinara sauce and top with mozzarella cheese.
- Place the sauce and cheese tray in the oven with the chicken and bake for 8-10 minutes.
- If desired, broil for 1 minute to brown the cheese.
- Serve the chicken topped with marinara and cheese, garnished with parsley.
