Ingredients

The bread

  • 1 loaf stale white or brioche bread

The batter

  • ¾ cup milk
  • ½ cup pumpkin puree
  • 4 eggs
  • 1 tablespoon packed brown sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • butter for the griddle

The coating

  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon

For serving

  • maple syrup

Instructions

  1. Cut the bread into sticks, optionally removing the crusts.
  2. Heat a griddle or skillet over medium heat.
  3. Whisk together milk, pumpkin, eggs, brown sugar, vanilla, and cinnamon in a bowl.
  4. Combine granulated sugar and cinnamon on a plate.
  5. Melt butter on the griddle to coat the pan.
  6. Dip the bread sticks into the batter quickly and place them on the griddle.
  7. Cook the sticks on all sides for 2-3 minutes until browned and cooked through.
  8. Roll the cooked sticks in the cinnamon sugar coating.
  9. Serve immediately with maple syrup if desired.
