Southwest Chipotle Burgers with Guacamole

Ingredients

The burgers

  • lb. ground beef
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon cayenne pepper
  • 1 teaspoon salt
  • cup salsa
  • 1 onion onion
  • 1 can chipotle pepper (in adobo sauce)
  • 2 eggs eggs, beaten
  • ¾ cup finely crushed tortilla chips
  • 6–8 slices cheddar cheese
  • 6–8 pieces burger buns

The guacamole

  • 2 pieces avocados
  • 1 bunch cilantro
  • ½ small red onion
  • 2 teaspoons salt
  • 1 teaspoon lime juice

Instructions

  1. Mash the avocados and mix with chopped red onion, cilantro, salt, and lime juice. Refrigerate.
  2. Combine ground beef with cumin, chili powder, cayenne, salt, and salsa in a bowl.
  3. Chop onion and chipotle pepper, add to the beef mixture along with beaten eggs and tortilla chips, and mix well.
  4. Form the mixture into patties and cook in a pan over medium heat, flipping halfway through.
  5. Add cheese on top of the burgers to melt while cooking.
  6. Serve the burgers on toasted buns topped with guacamole.
