Instructions
- Prepare the salted caramel by combining coconut milk, coconut sugar, and sea salt in a heavy-bottomed pot and whisk together.
- Bring the mixture to a boil for 15 minutes, watching carefully to prevent boiling over.
- Reduce heat and simmer for an additional 5 minutes, ensuring it does not burn.
- Pour the caramel into a bowl and stir occasionally as it cools to room temperature.
- If the caramel is not thick enough, return it to the pot and simmer for another 3-5 minutes.
- To make the bark, line an 8" x 8" dish with parchment paper.
- Melt the dark chocolate over a double boiler and pour it into the prepared dish.
- Let the chocolate cool to room temperature and then freeze until hard.
- Drizzle the cooled salted caramel over the chocolate and sprinkle with crumbled bacon.
- Freeze the bark until it is hard enough to break into pieces, then store in the refrigerator or freezer.
