Ingredients

The cauliflower and sauce

  • 1 head cauliflower (medium-size)
  • ¾ - 1 cup vegan buffalo sauce

The crispy coating

  • ¾ cup cornmeal
  • ¾ cup bread crumbs (gluten-free if needed)
  • 6 tablespoons hemp seeds or almond flour
  • 6 teaspoons dried parsley
  • 6 teaspoons garlic powder

The batter

  • 2 cups almond flour
  • 1 cup vegan buffalo sauce
  • 1 cup sparkling soda water
  • 2 teaspoons baking powder
  • drizzle oil optional

To serve with

  • to taste vegan ranch dressing
  • to taste celery
  • to taste carrots

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Slice the cauliflower into large pieces or nugget size.
  3. Make the crispy coating by mixing cornmeal, bread crumbs, ground hemp seeds (or almond flour), parsley, and garlic powder in a shallow dish.
  4. Prepare the batter by combining almond flour, buffalo sauce, soda water, and baking powder until mixed.
  5. Dip each cauliflower piece in the batter, then coat it in the crispy mixture, and place on a parchment-lined baking sheet.
  6. Bake for about 25 minutes, then drizzle hot sauce over the cauliflower pieces and flip them to coat both sides.
  7. Return to the oven and bake for an additional 10 minutes until crispy.
  8. Serve fresh with vegan ranch dressing and vegetables.
