Ingredients

Brownie Mixture

  • ½ cup Unsalted butter
  • 4 oz Unsweetened baking chocolate
  • ¾ cup Wholesome Yum Blanched Almond Flour
  • cup Wholesome Yum Powdered Allulose
  • 2 tbsp Dutch processed cocoa powder
  • 2 large Eggs
  • 1 tsp Vanilla extract
  • ¼ tsp Sea salt

Cheesecake Mixture

  • 16 oz Cream cheese
  • ¾ cup Wholesome Yum Powdered Allulose
  • 2 large Eggs
  • ½ tbsp Lemon juice
  • 1 tsp Vanilla extract
  • ¼ cup Sugar-free dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (177°C) and line an 8x8 inch pan with parchment paper.
  2. Melt the butter and chocolate in a double boiler over low heat, stirring until smooth.
  3. Remove from heat and stir in vanilla extract.
  4. Add almond flour, powdered allulose, cocoa powder, sea salt, and eggs to the melted mixture and stir until uniform.
  5. Transfer ¾ of the brownie batter to the lined pan and set aside the remaining batter.
  6. In a separate bowl, beat cream cheese and powdered allulose until fluffy.
  7. Beat in the eggs one at a time, followed by lemon juice and vanilla extract.
  8. Fold in ¼ of the reserved brownie batter into the cheesecake mixture, creating swirls.
  9. Pour the cheesecake mixture over the brownie layer in the pan and sprinkle with chocolate chips.
  10. Bake for 35-40 minutes until the cheesecake layer is almost set but still slightly jiggly.
  11. Allow to cool completely before cutting.
