Ingredients

The cookie dough

  • 3 cups all-purpose flour
  • teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter
  • 2 ounces full-fat cream cheese
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon almond extract

The topping

  • ¾ cup sanding sugar

Instructions

  1. Whisk together the flour, baking powder, and salt, then set aside.
  2. In a large bowl, beat the butter and cream cheese until smooth, then add the sugar and mix until creamy.
  3. Add the egg, vanilla, and almond extract, mixing until combined.
  4. Combine the wet and dry ingredients until a thick dough forms, then chill for at least 1 hour.
  5. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  6. Roll the dough into balls and coat them in sanding sugar before placing them on the baking sheets.
  7. Gently press down on each dough ball to flatten slightly.
  8. Bake for 12-13 minutes until lightly browned on the edges.
  9. Allow to cool on the baking sheets for 5 minutes before transferring to a wire rack.
