Ingredients

The cookies

  • 1 1/3 cups unbleached all-purpose flour
  • ¼ tsp baking soda
  • ¼ tsp salt
  • cup granulated sugar
  • 10 Tbsp unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ tsp almond extract (optional)

The frosting

  • 1 cup powdered sugar
  • 3 Tbsp unsalted butter, softened
  • 2 - 3 tsp milk
  • ½ tsp vanilla extract
  • to taste green food coloring (optional)
  • to taste Christmas sprinkles (optional)
  • 8 pieces 1 ½-inch broken pretzel rods (optional)

Instructions

  1. Preheat the oven to 350°F and prepare a 9-inch springform or cake pan.
  2. Whisk together flour, baking soda, and salt in a medium bowl and set aside.
  3. In a stand mixer, blend butter and sugar until combined, then add the egg, vanilla, and almond extract.
  4. Mix in the flour mixture until combined.
  5. Spread the dough evenly in the prepared pan and bake for 14-16 minutes.
  6. Allow the cookie to cool completely on a wire rack for about 1 hour.
  7. Prepare the frosting by blending powdered sugar, butter, milk, and vanilla until smooth, adding food coloring if desired.
  8. Remove the cookie from the pan and cut it into 8 wedges.
  9. Decorate the cookies with frosting, sprinkles, and pretzel pieces for decoration.
