Watermelon Shiso Salad

Ingredients

The salad

  • 4 cups cubed seedless watermelon
  • 1 cup diced cucumber
  • 3 pieces scallions
  • ¼ cup chopped cilantro
  • to taste salt and pepper
  • few slices jalapeño (optional)
  • 2 leaves shiso (optional)
  • 1–2 teaspoons toasted sesame seeds (for garnishing)

The dressing

  • ½ teaspoon very finely minced ginger
  • tablespoons fresh lime juice
  • tablespoons honey or agave
  • 1 teaspoon toasted sesame oil
  • 2 teaspoons shoyu, soy sauce or GF liquid amino acids

Instructions

  1. Combine watermelon, cucumber, scallions, and cilantro in a medium bowl.
  2. Mix dressing ingredients in a small bowl and pour over the salad.
  3. Gently toss the salad and taste for seasoning, adding salt and pepper as needed.
  4. Garnish with jalapeño, shiso ribbons, and toasted sesame seeds.
