Ingredients

The Salad

  • 4 cups Watermelon, cubed
  • 6 pieces Persian Cucumbers, sliced
  • ½ piece Red Onion, thinly sliced
  • ½ bunch Mint, chopped
  • 1 piece Jalapeño, seeds removed and chopped
  • ½ cup Feta Cheese, crumbled
  • ½ cup Pistachios, chopped

The Dressing

  • ¼ cup Extra Virgin Olive Oil
  • 2 tablespoons Honey or Maple Syrup
  • 1 piece Lime, zested and juiced
  • 1 piece Lemon, zested and juiced
  • ½ teaspoon Sea Salt

Instructions

  1. 1. Wash and chop the watermelon and Persian cucumbers, then add them to a large bowl.
  2. 2. Add the remaining salad ingredients to the bowl and set aside.
  3. 3. In a separate small bowl, whisk together all dressing ingredients until fully combined.
  4. 4. Pour the dressing over the salad and toss until everything is fully coated.
  5. 5. Serve and enjoy! Store leftovers in the fridge for up to three days.
