Lean Mean Green Pea Salad

Creamy Cucumber Dressing

Instructions
- Cook the frozen peas and rinse them under cold water until cooled, then drain.
- Peel the cucumber, cut it in half, then cut each half lengthwise. Scrape out the seeds and save the peels for the dressing.
- Slice the cucumber thinly and add to a large mixing bowl.
- Slice the endive diagonally and add to the bowl with the cucumber.
- Add watercress, cold peas, avocado, and walnuts to the bowl and toss gently.
- In a small food processor, blend the dressing ingredients until smooth.
- Divide arugula between two plates to create a bed for the salad.
- Mound the salad mixture in the center of the arugula and garnish with endive leaves, avocado slices, and walnuts.
- Drizzle dressing over the salad just before serving.
