Whipped Feta with Roasted Garlic

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cut the red pepper into large pieces, remove seeds, and place it on the baking tray. Drizzle with olive oil and bake for 30-35 minutes until soft, flipping halfway.
- Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and bake for 30-40 minutes until roasted.
- Place the whole olives in a small baking dish, drizzle with olive oil and chili flakes, and bake for 20 minutes until fragrant and slightly golden.
- In a bowl, break the feta cheese into pieces, add yogurt, lemon juice, and lemon zest, and whip until smooth.
- Cut the roasted red pepper into strips and quarter them. Remove garlic cloves from the skin and cut them smaller. Slice the olives in half.
- Arrange the roasted vegetables on top of the whipped feta and garnish with parsley, olive oil, salt, and pepper.
- Serve immediately with toasted sourdough, pitas, or vegetables.
