Ingredients

The meat and vegetables

  • 2 lbs lean ground beef
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium yellow onion
  • 3 cloves garlic

The seasonings

  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 1 ½ teaspoons dried Italian seasoning
  • 1 teaspoon paprika

The base

  • 3 cups frozen cauliflower rice
  • 8 ounces cream cheese

The cheese

  • 6-7 ounces sliced Provolone cheese

Optional garnish

  • to taste chopped fresh parsley

Instructions

  1. Preheat the oven to 350°F.
  2. In a large oven-safe skillet, cook the ground beef, bell peppers, onion, and garlic over medium heat for 8-10 minutes, breaking the beef into pieces.
  3. Reduce heat to low, add seasonings, cauliflower rice, and cream cheese, stirring until the cream cheese melts.
  4. Top with provolone cheese slices and bake for 10-12 minutes until the cheese is melted.
  5. Remove from the oven, let sit for 5-10 minutes, and garnish with parsley if desired before serving.
