Ingredients

The pasta

  • 10 ounces rigatoni pasta

The filling

  • 2 teaspoons olive oil
  • 1 pound ground beef
  • 8 ounces mushrooms
  • 1 green bell pepper diced
  • 1 onion chopped
  • 2 teaspoons garlic
  • to taste salt and pepper

The sauce

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 1 cup provolone cheese
  • 2 tablespoons chopped parsley

Instructions

  1. Cook the pasta in salted water according to package directions.
  2. Heat olive oil in a large pan over medium-high heat and add ground beef, seasoning with salt and pepper.
  3. Cook the beef for 4-5 minutes, breaking it up with a spatula.
  4. Add mushrooms, bell pepper, and onion, cooking until the beef is cooked through and vegetables are tender.
  5. Stir in garlic and cook for an additional 30 seconds.
  6. In a separate saucepan, melt butter over medium heat, then whisk in flour and cook for 1 minute.
  7. Slowly whisk in milk and continue whisking until the sauce thickens, about 4-6 minutes.
  8. Remove the sauce from heat and whisk in cheese until melted and smooth.
  9. Drain the pasta and mix it with the cheese sauce, then add half of the beef mixture.
  10. Top with the remaining beef mixture, sprinkle with parsley, and serve.
