Ingredients

The salad

  • 1 cup cubed watermelon
  • 1 cup cubed cucumber
  • ½ cup vegan feta
  • ¼ cup sliced mint leaves
  • ¼ cup chopped red onion
  • 2 - 4 tablespoons chopped jalapeño pepper
  • 1 - 2 cups arugula (optional)

The dressing

  • 4 - 5 teaspoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon maple syrup
  • ¼ teaspoon salt (optional)
  • a pinch chipotle powder (optional)

Instructions

  1. Combine all salad ingredients in a bowl.
  2. Mix dressing ingredients together until well combined.
  3. Add the dressing to the salad and mix thoroughly.
  4. Serve immediately.
