Ingredients

The green sauce

  • 1 bunch fresh parsley, cilantro, arugula, mustard greens or a mix
  • 1 small bunch chives
  • 1 clove garlic
  • 2 tablespoons lemon or lime juice
  • ¼ cup olive oil
  • ¼ cup avocado
  • ¾ teaspoon sea salt
  • ½ teaspoon freshly cracked black pepper

For the eggs + toast

  • as needed eggs
  • as needed tablespoons extra-virgin olive oil
  • as needed slices good bread
  • as needed flaky sea salt

Instructions

  1. Chop the herbs and chives, juice the lemon, peel the garlic, and scoop out the avocado.
  2. Combine all ingredients for the sauce in a blender or food processor and pulse until blended, adding water if necessary to achieve desired consistency.
  3. Taste and adjust the flavor with more lemon, olive oil, salt, or pepper as needed.
  4. For the toast, boil water and prepare an ice bath. Cook the eggs for 7 minutes, then transfer to the ice bath.
  5. Heat olive oil in a skillet and toast the bread slices until golden and crisp.
  6. Spread the green sauce on the toast, peel the eggs, and cut them over the toast. Sprinkle with sea salt.
