Creamy Vegan White Bean Ranch Dip

Ingredients

  • 1 small garlic clove, peeled
  • 1 can (15-ounce, or 425 g) white beans, rinsed and drained
  • 1 tablespoon vegan mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon packed fresh dill sprigs
  • 1 teaspoon nutritional yeast seasoning
  • ½ teaspoon onion powder
  • teaspoon salt
  • 1 pinch freshly ground black pepper
  • 1 teaspoon chopped chives (optional)

Instructions

  1. Mince the garlic in a food processor.
  2. Add white beans, mayonnaise, lemon juice, dill, nutritional yeast, onion powder, salt, and pepper to the processor and blend until smooth.
  3. Stir in chopped chives if using.
  4. Chill the dip for a few hours before serving.
