Ingredients

The marinade

The chicken

  • 1.5 lbs. boneless skinless chicken thighs or breasts

Instructions

  1. Combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl or zip-top bag.
  2. If using breasts, fillet them into two thinner pieces; otherwise, leave thighs whole.
  3. Place chicken in the marinade, ensuring it is fully coated, and marinate for 30 minutes to 8 hours in the refrigerator.
  4. Heat a skillet over medium heat and cook chicken pieces for about 5-7 minutes on each side until browned and cooked through.
  5. Avoid overcrowding the skillet; cook in batches if necessary.
  6. Discard excess marinade and let the cooked chicken rest for five minutes before slicing and serving.
