Greek Chicken Marinade

Ingredients

  • ¼ cup olive oil
  • 6 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon oregano, chopped
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon parsley, chopped
  • ½ tablespoon marjoram (optional)
  • pinch nutmeg
  • to taste salt and pepper

Instructions

  1. Whisk together olive oil, garlic, lemon juice, thyme, oregano, rosemary, parsley, marjoram, nutmeg, salt, and pepper in a medium bowl.
  2. Coat the chicken in the marinade, then seal the bowl with plastic wrap or place it in a Ziplock bag and refrigerate for at least an hour, preferably overnight.
  3. Remove the chicken from the marinade and discard any excess.
  4. Preheat the grill to medium-high heat.
  5. Grill the chicken for about 4-5 minutes on each side until charred and cooked through.
  6. Check for doneness using an instant-read thermometer, aiming for an internal temperature of 160°F.
  7. Let the chicken rest for 5 minutes before serving.
