Balsamic Braised Green Beans

Ingredients

  • cup light olive oil
  • 1 teaspoon minced garlic
  • 1 cup chopped onion
  • 1 cup water
  • 2 to 3 Tablespoons fresh orange juice
  • 1 teaspoon maple syrup (optional)
  • 1 cup whole black olives
  • 1 lb green beans, trimmed
  • 3 Tablespoons balsamic vinegar
  • 2 to 4 Tablespoons toasted pine nuts
  • 2 Tablespoons fresh thyme
  • to taste Kosher salt
  • to taste freshly ground black pepper
  • fresh orange slices

Instructions

  1. Heat olive oil in a large saucepan over medium-high heat and sauté garlic and onion until fragrant.
  2. Add orange juice and optional maple syrup, cooking for an additional 1 to 2 minutes.
  3. Stir in olives and water, cooking until olives begin to soften.
  4. Add green beans, salt, pepper, balsamic vinegar, and additional water. Cover and reduce heat to medium, cooking until green beans are tender.
  5. Toast pine nuts in an oven until golden brown, being careful not to burn them.
  6. Serve green beans garnished with thyme, orange slices, and toasted pine nuts.
