Ingredients

The dough

  • cups whole wheat flour
  • cups all-purpose flour
  • tsp salt
  • 1 packet instant or bread machine yeast (2¼ tsp)
  • 1 Tbsp cinnamon
  • 2 Tbsp brown sugar
  • 1-1½ cups water

The filling

  • ½ cup chocolate chips

Instructions

  1. Combine the dry ingredients in a large bowl and stir until there are no clumps.
  2. Add 1 cup of water and mix, adding more water as needed until a sticky dough forms.
  3. Cover the bowl loosely and let it rest for two hours at room temperature.
  4. After resting, flour the dough and a clean work surface, then transfer the dough and knead it a few times.
  5. Shape the dough into a rectangle and sprinkle chopped chocolate chips on top.
  6. Roll the dough tightly from the short end, enclosing the chocolate chips.
  7. Place the rolled dough seam side down in a greased bread pan and let it rise until doubled in size (about one hour).
  8. Preheat the oven to 400°F and bake the bread for about 35 minutes until golden brown.
  9. Remove from the pan and let cool on a wire rack before slicing.
