Ingredients

  • ¼ cup popcorn kernels
  • ¾ cup cashews (raw)
  • 3 tablespoons butter
  • 2 tablespoons honey
  • ½ teaspoon cinnamon
  • ¼ teaspoon ginger (ground)
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 325°F.
  2. Melt the butter and honey together in a small pot over low heat, then mix in the cinnamon, ginger, and salt.
  3. Coat the cashews with about a tablespoon of the butter/honey mixture in a large mixing bowl.
  4. Spread the coated cashews on a baking sheet lined with parchment paper and bake for 6 minutes.
  5. In the same bowl, coat the popcorn with the remaining butter/honey mixture.
  6. After 6 minutes, add the popcorn to the baking sheet with the cashews and mix them together.
  7. Return the baking sheet to the oven and bake for an additional 4 minutes.
  8. Stir or shake the mixture, then bake for another 2 minutes.
  9. Continue to check and stir every minute until the mixture turns dark brown.
  10. Let cool as it will harden.
