30-Minute Blackstone Chicken Quesadillas

Ingredients

The filling

  • 1 pound chicken breast, cubed
  • 2 tablespoons taco seasoning
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 1 piece chipotle chili pepper in adobo sauce, diced fine

The assembly

  • 8 ounces shredded cheese
  • 4 pieces burrito-sized flour tortillas
  • to coat none oil

Instructions

  1. Toss the chicken breast cubes with taco seasoning and let sit for at least two hours.
  2. Heat a skillet or Blackstone griddle to medium-high or low heat respectively.
  3. Add oil to the pan or griddle, then add the chicken and cook for 7 minutes.
  4. Add the onion, bell pepper, and chipotle chili pepper, cooking until the vegetables are tender and the chicken is cooked through, about 5 to 7 minutes.
  5. Transfer the chicken mixture to a clean bowl.
  6. Reduce the heat to medium-low, add more oil, and place the tortillas in the skillet.
  7. Sprinkle cheese, then add the chicken and vegetable mixture, followed by more cheese.
  8. Fold the tortillas in half or top with another tortilla and cook until crispy and brown, about 5 to 7 minutes.
  9. Cut into wedges and serve with desired toppings.
