30-Minute Blackstone Chicken Quesadillas

Instructions
- Toss the chicken breast cubes with taco seasoning and let sit for at least two hours.
- Heat a skillet or Blackstone griddle to medium-high or low heat respectively.
- Add oil to the pan or griddle, then add the chicken and cook for 7 minutes.
- Add the onion, bell pepper, and chipotle chili pepper, cooking until the vegetables are tender and the chicken is cooked through, about 5 to 7 minutes.
- Transfer the chicken mixture to a clean bowl.
- Reduce the heat to medium-low, add more oil, and place the tortillas in the skillet.
- Sprinkle cheese, then add the chicken and vegetable mixture, followed by more cheese.
- Fold the tortillas in half or top with another tortilla and cook until crispy and brown, about 5 to 7 minutes.
- Cut into wedges and serve with desired toppings.
