Chopped Taco Ground Beef Salad

Ingredients

The salad

  • 1 lb lean ground beef or ground turkey/ground chicken
  • 3 tbsp taco seasoning
  • 4 cups romaine or green lettuce, chopped
  • 1 each bell pepper (red, orange or yellow), chopped
  • 1 cup corn
  • 1 15-oz can black beans, drained and rinsed
  • 1 cup cheddar cheese, shredded
  • 1 each avocado, cubed
  • ½ each red onion, diced
  • ¼ cup cilantro, chopped
  • 4 oz tortilla chips, crushed

Taco ranch dressing

  • ½ cup plain Greek yogurt
  • ¼ cup milk
  • ½ tbsp ranch dressing seasoning
  • ½ tbsp taco seasoning
  • ½ each lime, juiced

Instructions

  1. Brown the ground beef in a skillet on medium heat with taco seasoning and set aside to cool slightly.
  2. Make the taco ranch dressing by whisking together Greek yogurt, ranch seasoning, taco seasoning, lime juice, and milk until smooth.
  3. In a large salad bowl, combine lettuce, cilantro, red onion, avocado, tomato, bell pepper, ground beef, crushed tortilla chips, corn, black beans, and cheese.
  4. Pour the dressing over the salad and toss until everything is evenly coated.
  5. Serve topped with additional dressing, tortilla chips, or cilantro.
