Banana Cinnamon Chip Cake

Ingredients

The cake

  • 3 pieces very ripe bananas
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 ½ cups unbleached all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 cup granulated sugar
  • 1 cup cinnamon chips

The topping

  • 3 Tbsp granulated sugar
  • ¼ tsp ground cinnamon

Instructions

  1. Preheat the oven to 375°F and spray an 8-inch square pan with cooking spray.
  2. Mash the bananas in a medium bowl and mix in the eggs and vanilla until combined.
  3. Stir in the flour, baking soda, cinnamon, and sugar.
  4. Add ¾ cup of cinnamon chips and stir briefly before pouring the batter into the prepared pan.
  5. In a small bowl, mix the topping ingredients and sprinkle over the batter, then add the remaining ¼ cup of cinnamon chips on top.
  6. Bake for 35-40 minutes until a toothpick inserted comes out clean, then cool in the pan for at least 15 minutes before serving.
