Ingredients

The pumpkin and apple

  • 1 1/4 pound pumpkin
  • 1 medium sweet apple

The flavorings

  • 2 tablespoons maple syrup
  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon vanilla extract
  • a tiny pinch salt

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare the pumpkin by cutting off the top, halving it, and scooping out the seeds and pulp.
  3. Cut the pumpkin into eighths and place it flesh side down on a lined sheet pan.
  4. Quarter and core the apple, placing it skin side up on the sheet pan.
  5. Bake the pumpkin and apple until fork tender, about 45 minutes, removing the apple after 20 minutes.
  6. Scoop the flesh of the pumpkin and apple into a food processor.
  7. Add the maple syrup, pumpkin pie spice, vanilla, and salt, then puree until smooth.
  8. Simmer the mixture in a saucepan on medium-low heat for about 20 minutes, scraping the sides occasionally.
  9. Reduce the heat to low and simmer until thickened, about 5 more minutes.
