Instructions
- Preheat the oven to 400°F.
- Prepare the pumpkin by cutting off the top, halving it, and scooping out the seeds and pulp.
- Cut the pumpkin into eighths and place it flesh side down on a lined sheet pan.
- Quarter and core the apple, placing it skin side up on the sheet pan.
- Bake the pumpkin and apple until fork tender, about 45 minutes, removing the apple after 20 minutes.
- Scoop the flesh of the pumpkin and apple into a food processor.
- Add the maple syrup, pumpkin pie spice, vanilla, and salt, then puree until smooth.
- Simmer the mixture in a saucepan on medium-low heat for about 20 minutes, scraping the sides occasionally.
- Reduce the heat to low and simmer until thickened, about 5 more minutes.
