Homemade Pumpkin Butter

Instructions
- Combine all ingredients in a pot.
- Whisk together and bring to a low simmer.
- Simmer for 20-25 minutes, stirring often until thick.
- Adjust spices and sweeteners to taste.
- If too thick, add more apple cider.
- Let cool completely and store in the fridge.
