Instructions
- In a heavy-bottom saucepan, combine pumpkin puree, sugar, maple syrup, fresh ginger, ground ginger, cinnamon, nutmeg, and salt.
- Bring the mixture to a low simmer over medium heat, stirring every five minutes until it thickens and darkens in color.
- Stir in the apple cider vinegar, then let the mixture cool before storing it in the fridge for up to two weeks or freezing it for up to six months.
