Ingredients

The chips

  • 4-5 medium potatoes
  • approx 4 cups white vinegar
  • 1-1.5 tsp coarse sea salt
  • a very small sprinkle freshly ground black pepper
  • 2 tsp extra virgin olive oil

The green beans

  • 3 handfuls fresh green beans

Instructions

  1. Wash and slice the potatoes into 1/4 inch rounds.
  2. Wash and trim the green beans.
  3. Place both the potatoes and green beans in a medium-sized pot.
  4. Pour vinegar into the pot until the potatoes and green beans are covered.
  5. Bring to a boil, then reduce to medium heat and cook for 5 minutes.
  6. Remove from heat and let sit for 30 minutes.
  7. Preheat the oven to 425°F.
  8. On a greased baking sheet, lay the potato rounds flat.
  9. Drizzle olive oil over the potatoes and mix with hands.
  10. Sprinkle salt and pepper on top of the potatoes.
  11. Bake for 30-35 minutes, flipping the potatoes halfway.
  12. After 30 minutes, add the green beans to the baking sheet, drizzle with oil, and sprinkle more salt.
  13. Bake for an additional 10-15 minutes, watching carefully to avoid burning.
