Homemade Salt & Vinegar Chips

extra virgin olive oil
The green beans

handfuls
fresh green beans
Instructions
- Wash and slice the potatoes into 1/4 inch rounds.
- Wash and trim the green beans.
- Place both the potatoes and green beans in a medium-sized pot.
- Pour vinegar into the pot until the potatoes and green beans are covered.
- Bring to a boil, then reduce to medium heat and cook for 5 minutes.
- Remove from heat and let sit for 30 minutes.
- Preheat the oven to 425°F.
- On a greased baking sheet, lay the potato rounds flat.
- Drizzle olive oil over the potatoes and mix with hands.
- Sprinkle salt and pepper on top of the potatoes.
- Bake for 30-35 minutes, flipping the potatoes halfway.
- After 30 minutes, add the green beans to the baking sheet, drizzle with oil, and sprinkle more salt.
- Bake for an additional 10-15 minutes, watching carefully to avoid burning.
