Ingredients

Spinach and Mushrooms

  • 8 oz mushrooms
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • tsp salt
  • tsp freshly cracked black pepper
  • 8 oz frozen spinach

Garlic Butter

  • 2 Tbsp butter, room temperature
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp garlic powder
  • tsp salt

Pizzas

  • 1 loaf French bread
  • 1 cup shredded cheese
  • tsp crushed red pepper
  • tsp freshly cracked black pepper

Instructions

  1. Preheat the oven to 350ºF.
  2. Slice the mushrooms and sauté with olive oil, minced garlic, salt, and pepper until softened.
  3. Add the frozen spinach to the skillet and sauté until heated through and moisture has evaporated.
  4. Transfer the spinach and mushrooms to a bowl to cool.
  5. Make the garlic butter by mixing butter, olive oil, minced garlic, garlic powder, and salt.
  6. Cut the French bread in half length-wise and spread the garlic butter mixture on each piece.
  7. Combine half of the shredded cheese with the spinach and mushroom mixture, then divide it over the bread.
  8. Top with the remaining cheese and bake for about 15 minutes until the cheese is melted and slightly browned.
