Spicy Red Curry Cauliflower Wings

Ingredients

The batter

  • ¾ cup brown rice flour or chickpea flour
  • 1 pinch sea salt
  • ½ tsp curry powder
  • 2 tsp tandoori masala spice
  • ½ cup unsweetened plain almond or rice milk
  • 6-8 Tbsp water

The cauliflower

  • 1 head cauliflower

The sauce

  • ¼ cup red curry paste
  • 2 tsp melted coconut oil
  • 2-3 tsp maple syrup
  • 2-3 Tbsp water

For serving

  • to taste green chutney

Instructions

  1. Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Prepare the batter by mixing the dry ingredients, then adding almond milk and a smaller amount of water until the desired consistency is reached.
  3. Coat the cauliflower pieces in the batter and place them on the baking sheet with space in between.
  4. Bake the cauliflower for 25 minutes.
  5. While baking, prepare the sauce by whisking together curry paste, coconut oil, maple syrup, and some water to thin it out.
  6. After baking, dip the cauliflower in the sauce and return to the baking sheet.
  7. Bake again for another 20-25 minutes until browned and caramelized.
  8. Serve immediately, optionally with green chutney.
