Instructions
- Preheat the grill to 400 degrees.
- Prepare the bell peppers by cutting them into large squares and discarding the core and seeds.
- Slice the caps from the portabella mushrooms and remove the gills.
- In a large bowl, combine ground turkey, egg, breadcrumbs, parmesan cheese, cilantro flakes, black pepper, smoked paprika, garlic powder, salt, and red pepper flakes. Mix well and form into 3 patties.
- Grill the red and green bell peppers, mushroom caps, and pineapple slices for 4 to 5 minutes per side until charred.
- Grill the turkey patties for 4 to 6 minutes per side.
- For the teriyaki sauce, mix cornstarch with an equal amount of water in a small bowl.
- In a small pot, combine soy sauce, pineapple juice, honey, brown sugar, minced garlic, sesame oil, black pepper, salt, and garlic powder. Heat until it bubbles, then stir in the cornstarch mixture and remove from heat.
- Assemble the burger with grilled pineapple, turkey patty, vegetables, and drizzle with teriyaki sauce on the buns.
