Ingredients

The burgers

  • 1 lb lean ground turkey
  • 2 Tbsp teriyaki sauce
  • ½ cup shredded zucchini
  • ¼ cup red onion, finely chopped
  • ¼ cup cilantro, chopped
  • 1 tsp fresh grated ginger
  • to taste salt and pepper
  • 4 whole wheat buns or lettuce cups

Toppings

  • 4 grilled pineapple rings
  • to taste red onion, sliced into rings
  • to taste leafy lettuce
  • to taste extra teriyaki sauce

Instructions

  1. Combine ground turkey, teriyaki sauce, shredded zucchini, onion, cilantro, ginger, and salt/pepper in a large bowl without over-mixing.
  2. Shape the mixture into 4 round burger patties.
  3. Preheat the grill or grill pan on medium-high heat and lightly oil it.
  4. Cook the burgers for about 5 to 6 minutes on each side until fully cooked (internal temperature should reach 165°F).
  5. Grill the pineapple rings for about 3 minutes per side.
  6. Assemble the burgers by placing lettuce on the bottom half of a bun, adding the turkey patty, a grilled pineapple ring, and red onion.
  7. Drizzle with teriyaki sauce and add the top bun before serving.
