Ingredients

The burgers

  • 2 lbs ground turkey
  • 1 can artichoke hearts, drained and finely diced
  • 1 cup olives, finely diced
  • ¼ cup nutritional yeast
  • ½ tsp sea salt
  • ½ tsp ground pepper

The sauce

  • ½ english cucumber peeled and roughly chopped
  • 1 cup coconut yogurt
  • 2 cloves garlic, peeled
  • ½ cup fresh dill
  • 1 tbsp lemon juice
  • to taste sea salt and pepper

For serving

  • 1 head iceberg lettuce
  • 2 avocados, sliced
  • ½ red onion, sliced into thin rings

Instructions

  1. Preheat the grill to medium-high heat if grilling.
  2. Chop the artichoke hearts and olives, then mix them with the turkey, nutritional yeast, salt, and pepper in a bowl.
  3. Form the mixture into 8 large burger patties, using oil on your hands to prevent sticking.
  4. Prepare the sauce by chopping the cucumber and removing excess moisture, then blend it with the other sauce ingredients until smooth.
  5. Cook the burgers on the grill or in a skillet over medium-high heat for 4-5 minutes per side until fully cooked.
  6. While the burgers cook, slice the avocado and onion, and prepare the iceberg lettuce leaves as buns.
  7. Assemble the burgers with a lettuce leaf, a patty, avocado, onion, and drizzle with sauce before topping with another lettuce leaf.
