Ingredients

  • 1 whole avocado
  • ½ cup Greek yogurt
  • 1 tsp lemon juice
  • ¼ tsp salt
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh cilantro
  • ¼ cup sliced scallions
  • 1 15 oz can chickpeas

Instructions

  1. Mash together avocado, Greek yogurt, lemon juice, salt, parsley, cilantro, and scallions in a bowl.
  2. Drain chickpeas and add them to the bowl, stirring and mashing them into the dressing.
  3. Taste and adjust salt if necessary.
  4. Serve the salad over greens, in a pita, or as a sandwich.
