Instructions
- Cut the Texas toast into about 3 strips per slice.
- Heat vegetable oil in a skillet over medium heat.
- In a shallow pan, mix sugar, salt, vanilla, milk, flour, and baking powder, then whisk in the eggs.
- Test the oil temperature by flicking water into the pan.
- Soak each strip of bread in the milk mixture quickly on both sides.
- Shake off excess batter and place the strips in the hot oil.
- Cook until golden brown and crispy, about 3-5 minutes per side.
- Remove from oil and drain on paper towels.
- Keep cooked pieces warm in the oven until ready to serve.
- Roll each piece in cinnamon sugar before serving.
