Ingredients

  • 8 slices sandwich bread
  • 3 large eggs
  • cup skim milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • a pinch of salt
  • ½ teaspoon powdered sugar

Instructions

  1. Cut each slice of bread into 3 equal strips.
  2. Whisk together the eggs, milk, vanilla extract, cinnamon, and salt until combined.
  3. Pour the egg mixture into a shallow dish.
  4. Lightly mist a skillet or griddle with cooking spray and heat it to medium.
  5. Dip the bread strips into the egg mixture, allowing excess liquid to drip off.
  6. Lay the strips on the pan/griddle and cook for 2-3 minutes on each side until golden and crisp.
  7. Transfer to a platter and sprinkle with powdered sugar.
