The green beans

  • 1 pound green beans

Optional seasoning

  • 2 tablespoons extra-virgin olive oil
  • 1 clove garlic
  • ½ lemon juice
  • ½ teaspoon lemon zest
  • to taste sea salt
  • to taste freshly ground black pepper

Instructions

  1. 1. Wash and trim the green beans, then set a large pot of salted water to boil.
  2. 2. Drop the trimmed beans into the boiling water and blanch for 2 minutes.
  3. 3. Immediately transfer the beans to a bowl of ice water to cool completely for about 15 seconds.
  4. 4. Drain the beans and place them on paper towels to dry.
  5. 5. Toss the blanched beans with olive oil, garlic, lemon juice, lemon zest, salt, and pepper, or use them in other recipes.
