Ingredients

  • 1 ½ cup part skim grated mozzarella cheese
  • 2 oz cream cheese
  • 1 large egg
  • 1 ¼ cup almond flour
  • 2 tablespoon oat fiber (or protein powder or more almond flour)
  • 1 tablespoon baking powder

Instructions

  1. Melt the mozzarella and cream cheese in a microwave-safe bowl for 1 minute, then stir and heat for an additional 30 seconds to 1 minute until smooth.
  2. Add the egg to the melted cheese and blend until smooth using a food processor.
  3. Incorporate the dry ingredients into the cheese mixture and process until a sticky dough forms.
  4. Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  5. Divide the dough into 5 equal pieces and shape each into a ball, then flatten slightly while maintaining a domed shape.
  6. Place a metal pan at the bottom of the oven and add ice cubes to create steam.
  7. Bake the buns for about 12 minutes or until golden brown.
  8. Allow the buns to cool before removing from the baking sheet.
