Ingredients

  • 1 ½ cup part skim grated mozzarella cheese
  • 2 oz cream cheese
  • 1 large egg
  • 1 ¼ cup almond flour
  • 2 tbsp oat fiber (or protein powder or ¼ c. more almond flour)
  • 1 tbsp baking powder

Instructions

  1. Microwave mozzarella and cream cheese until melted, stirring occasionally.
  2. Blend melted cheese with the egg in a food processor until smooth.
  3. Add dry ingredients to the cheese mixture and process until a sticky dough forms.
  4. Preheat oven to 400°F and prepare a baking sheet with parchment paper.
  5. Divide the dough into 5 equal pieces and shape into balls, flattening slightly.
  6. Place ice cubes in a metal pan at the bottom of the oven to create steam.
  7. Bake for about 12 minutes or until golden brown, then cool before removing.
