Pimento Cheese Jalapeno Poppers

Ingredients

  • 1 lb jalapenos, sliced lengthwise with seeds removed
  • 1 lb bacon, precooked for 3 minutes in microwave
  • ½ cup cream cheese
  • ½ cup pimento cheese
  • dash bbq rub

Instructions

  1. Soften the cream cheese.
  2. Cut the tops off the jalapenos and slice them in half lengthwise, removing the seeds.
  3. Microwave or cook the bacon until halfway done, about 3 minutes.
  4. Mix the cream cheese with the pimento cheese and fill each jalapeno half with the mixture.
  5. Dust the filled jalapenos with a light sprinkling of bbq rub.
  6. Top each filled jalapeno with a piece of bacon.
  7. Cook the jalapeno poppers at 350 degrees on the grill for about 10 minutes until the bottoms are charred and the cheese is melted.
