Ingredients

Chicken and Seasoning

  • 10 oz Chicken Breast
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • ¼ tsp Kosher Salt
  • ½ tsp Freshly Cracked Black Pepper
  • 1 tbsp Oil (Avocado, Vegetable, or Olive)

Buffalo Spinach Dip

  • ½ cup Wing Sauce (such as Frank’s Red Hot)
  • ½ cup Whipped Cream Cheese
  • 2 cups Baby Spinach, roughly chopped
  • ¾ cup shredded Sharp Cheddar
  • cup Sour Cream

Toppings

  • ¼ cup shredded Sharp Cheddar
  • to taste chopped Green Onions

Instructions

  1. Pat the chicken breast dry and slice it in half if thick.
  2. Mix garlic powder, onion powder, salt, and pepper in a small bowl, reserving some for later.
  3. Heat oil in a pan over medium heat and cook the chicken until browned and cooked through.
  4. Transfer the chicken to a bowl to rest, then shred it.
  5. Return the shredded chicken to the pan, add hot sauce and reserved seasoning, and cook for a few minutes.
  6. Stir in whipped cream cheese until combined.
  7. Add chopped spinach and cook until wilted.
  8. Mix in sour cream and shredded cheddar until fully combined.
  9. Transfer to an oven-safe dish, top with more cheddar, and broil until bubbly.
  10. Garnish with green onions and serve warm.
