Ingredients

The marinade

  • cup soy sauce
  • ¼ cup Worcestershire sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons brown or Dijon mustard
  • 2 tablespoons tomato paste
  • 1 tablespoon minced garlic
  • 1 tablespoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • cup avocado oil

The steak

  • 2 pounds flank steak

Instructions

  1. Blend soy sauce, Worcestershire sauce, brown sugar, mustard, tomato paste, garlic, oregano, salt, and pepper until smooth, then add oil.
  2. Place the steak in a dish and pour the marinade over it, letting it marinate for at least 1 hour at room temperature or up to 12 hours in the refrigerator.
  3. Remove the steak from the marinade and blot any excess.
  4. For griddling, heat the griddle to medium-high and cook the steak for about 10 minutes, flipping halfway through, until it reaches 130°F.
  5. For skillet cooking, heat the skillet to medium-high, cook the steak for 5 minutes on each side, then rest for 10 minutes before slicing.
  6. For grilling, preheat the grill to medium-high and cook the steak for 5 minutes on each side, then rest for 10 minutes before slicing.
