Instructions
- Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
- Whisk together the spices and set aside ½ teaspoon for rolling the cookies.
- In a medium bowl, whisk together flour, salt, baking soda, and the remaining spices.
- Beat the vegan butter and sugars until light and fluffy, then mix in the plant-based milk and vanilla.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Combine the reserved sugar with the reserved spices for rolling.
- Scoop 1.5 tablespoons of dough, roll into a ball, coat in the sugar mixture, and place on the baking sheets, leaving space between cookies.
- Bake for 10-12 minutes until the edges are slightly browned.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
