Ingredients

The cookie dough

  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • teaspoon cardamom
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • teaspoon allspice
  • 1 ¾ cups flour
  • ½ teaspoon baking soda
  • teaspoon salt
  • ½ cup vegan butter, softened
  • cup white sugar
  • cup brown sugar
  • 1 teaspoon vanilla extract
  • ¼ cup plant-based milk

For rolling

  • cup white sugar

Instructions

  1. Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. Whisk together the spices and set aside ½ teaspoon for rolling the cookies.
  3. In a medium bowl, whisk together flour, salt, baking soda, and the remaining spices.
  4. Beat the vegan butter and sugars until light and fluffy, then mix in the plant-based milk and vanilla.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Combine the reserved sugar with the reserved spices for rolling.
  7. Scoop 1.5 tablespoons of dough, roll into a ball, coat in the sugar mixture, and place on the baking sheets, leaving space between cookies.
  8. Bake for 10-12 minutes until the edges are slightly browned.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
