Instructions
- 1. Preheat the oven to 350°F.
- 2. In a large bowl, combine the flour, baking powder, salt, and cinnamon.
- 3. In a small bowl, mix the whisked eggs with the coconut sugar.
- 4. Add the almond milk, melted coconut oil, and vanilla to the egg mixture.
- 5. Combine the wet ingredients with the dry ingredients, being careful not to overmix.
- 6. Fold in 1 cup of blueberries and top with an additional ½ cup if desired.
- 7. Bake for 44-48 minutes or until a toothpick comes out clean.
