Ingredients

  • 2 ¼ cup whole wheat flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 2 whole eggs, whisked
  • cup coconut sugar
  • 1 cup almond milk
  • ½ cup coconut oil, melted
  • 1 tsp vanilla
  • 1 ½ cup blueberries

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. In a large bowl, combine the flour, baking powder, salt, and cinnamon.
  3. 3. In a small bowl, mix the whisked eggs with the coconut sugar.
  4. 4. Add the almond milk, melted coconut oil, and vanilla to the egg mixture.
  5. 5. Combine the wet ingredients with the dry ingredients, being careful not to overmix.
  6. 6. Fold in 1 cup of blueberries and top with an additional ½ cup if desired.
  7. 7. Bake for 44-48 minutes or until a toothpick comes out clean.
