Ingredients

Dough

  • 1 ½ cups Monterey Jack or Mozzarella cheese, grated
  • 2 ounces cream cheese
  • 1 large egg
  • 1 ⅓ cups almond flour
  • 3 tablespoons whey protein powder
  • ¼ teaspoon baking soda

Filling

  • 6 ounces deli ham
  • 4 ounces Monterey Jack or Mozzarella cheese, sliced

Instructions

  1. Preheat the oven to 400°F and place the rack in the middle.
  2. In a microwaveable bowl, combine the grated cheese and cream cheese, then microwave until melted and smooth.
  3. Beat the egg in a separate bowl and mix in the melted cheese, followed by the almond flour, protein powder, and baking soda until combined.
  4. Roll out the dough between two sheets of parchment paper to form a rectangle.
  5. Cut the dough into 8 smaller rectangles.
  6. Place a slice of cheese and a piece of ham on each rectangle.
  7. Fold the dough over the filling and place on a baking sheet.
  8. Bake for 20 minutes or until golden brown.
