Low Carb Ham and Cheese Hot Pocket

Instructions
- Preheat the oven to 400°F and place the rack in the middle.
- In a medium microwaveable bowl, combine the grated cheese and cream cheese, then microwave for 1 ½ to 2 minutes and stir until smooth.
- In another bowl, beat the egg and then mix in the melted cheese.
- Add the almond flour, protein powder, and baking soda, mixing until well combined. Let the dough cool slightly.
- Prepare two sheets of parchment paper and roll out the dough between them until it's nearly the size of the parchment.
- Cut the dough into 8 rectangles.
- Place a slice of cheese and a scrunched piece of ham on each rectangle.
- Fold the top of each rectangle over the filling and bake for 20 minutes or until golden brown.
