Ingredients

The muffins

  • 1 cup whole wheat pastry flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ cup cocoa powder
  • ¾ cup brown sugar
  • 1 cup old fashioned oats
  • 1 6 oz container plain non-fat Greek yogurt
  • 1 cup ripe banana pureed (about 2 bananas)
  • ¼ cup canola oil
  • 1 large egg
  • ¼ cup chopped dark chocolate or chocolate chips

For preparation

Instructions

  1. Preheat the oven to 400°F and prepare a muffin pan with cooking spray or liners.
  2. Sift together the flour, baking powder, baking soda, and cocoa powder in a medium bowl.
  3. In a large bowl, mix the brown sugar and oats, then add the yogurt, banana, canola oil, and egg, stirring until well combined.
  4. Combine the dry ingredients with the wet ingredients and stir until just moistened, then fold in the dark chocolate.
  5. Divide the batter into the muffin cups and bake for 17-20 minutes, or until a toothpick comes out clean.
