Instructions
- Preheat the oven to 350°F and line an 8x8 inch baking dish with parchment paper.
- Pulse almonds in a food processor until roughly chopped, then add pecans and pulse until all nuts are about ¼ inch in size.
- Transfer nuts to a bowl and mix in pumpkin seeds, shredded coconut, hemp hearts, powdered sweetener, and sea salt.
- In a separate bowl, whisk together almond butter, egg, and vanilla extract, then combine with the dry mixture.
- Fold in most of the chocolate chips, reserving some for the top, and press the mixture firmly into the lined baking dish.
- Press the reserved chocolate chips into the top of the mixture and cover with parchment paper, pressing down to compact tightly.
- Bake for 15-18 minutes until the edges are golden brown.
- Allow to cool completely in the pan before lifting out and slicing into bars.
