Ingredients

The base

  • 2 cups sliced almonds
  • ½ cup walnuts
  • ½ cup pecans
  • cup goji berries
  • cup raw pumpkin seeds
  • cup sunflower seeds
  • ¼ cup golden flax meal
  • ¼ cup Lily's SF Chocolate Chips

The flavorings

  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger

The binding agents

  • 2 tablespoons melted butter
  • 3 tablespoons low carb powdered sugar
  • cup Sukrin Fiber Syrup Clear

Instructions

  1. Preheat the oven to 350°F and prepare a baking dish with parchment paper.
  2. Process the sliced almonds until they resemble oats and place them in a bowl.
  3. Chop the walnuts and pecans, then add them to the bowl with the almonds.
  4. Mix in the goji berries, pumpkin seeds, sunflower seeds, flax meal, chocolate chips, cinnamon, ginger, and powdered sweetener.
  5. Pour the melted butter over the mixture and mix well.
  6. Add the fiber syrup and mix again until combined.
  7. Spread the mixture evenly in the prepared baking dish and press down firmly.
  8. Bake for 15-20 minutes until lightly browned around the edges.
  9. Let the bars cool in the dish for 10 minutes before transferring to a cooling rack.
  10. Once completely cool, cut into 16 bars and store in an airtight container.
